Sensory Notes: On the nose, the 2017 Santa Lucia Highlands Chardonnay showcases tantalizing aromas of Meyer lemon curd, apricot, wet stone, and honeysuckle. The palate is bright and uplifting, with lemon peel and under-scores of vanilla cream. A lingering stream of acidity moves the satiny texture into a medium-bodied finish.
Winemaking Notes: We hand-picked our Monte Negra grapes at night to preserve their freshness and delicate notes. The fruit was then sorted by hand, whole-cluster pressed and cold settled for 24 hours, followed by a two-week fermentation in 40% neutral oak and 60% stainless steel tanks. Stainless steel maintains the crisper characteristics of this wine, while the neutral oak and stirring of the lees in barrel provide a softer mouthfeel and complexity. The chardonnay did not go through malolactic fermentation, further preserving its freshness and green apple nuances.
