Sensory Notes: This alluring wine displays aromas of apricot, honey, white flowers, spicy pear and Golden Delicious apple, along with hints of pineapple and shortbread. The apricot and crisp apple notes are echoed on the rich, mouthcoating palate, where they mingle with flavors of vanilla and lemon pie, with a beam of acidity adding poise and energy.
Winemaking Notes: After an early budbreak and a long growing season, we picked the Hill Block on October 16th at 2 a.m., to ensure that the fruit arrived in the winery cool, and in pristine condition. The grapes were sorted by hand, cold-settled for 24 hours and barreled down and fermented in 100% French oak, with 40% of the barrels being new. Bâtonnage occurred each day during primary fermentation and the wine underwent 100% malolactic fermentation.
