Sensory Notes: This lush and juicy wine begins with sophisticated aromas of spicy sarsaparilla, black cherry, earthy forest floor, leather and blueberry pie, with just a hint of sweet tobacco leaf. Flavors of candied cherry, mulling spices, plum and raspberry glide across the palate, supported by supple tannins that carry the wine to a lingering fruit and spice finish.
Winemaker Notes: After a long growing season that started with an early budbreak, the 2015 vintage produced a small crop of exceptionally concentrated grapes. We harvested our grapes from all three vineyards at night between late August and early September. Each vineyard lot underwent a cold soak for five-to-seven days in open-top tanks with one pump-over each day. During fermentation, which lasted approximately 15 days, punch-downs were performed twice daily by hand. The wine was then aged in 30% new French oak for 11 months. Multiple blending trials were performed to find the perfect mix of barrels for this blend.
