Sensory Notes: This deep and luxurious Pinot Noir offers aromas of dark cherry, plum, mission fig, bramble and sage. The dark cherry and plum layers are echoed on the palate, where they mingle with hints of stone fruit, cedar and clove. Mouthcoating tannins and bright acidity add poise and definition, while carrying the wine to a lingering fruit and spice finish.
Winemaking Notes: The soil is comprised of sandy loam and rocky decomposed granite, which allows for excellent drainage. When fermentation is complete, only the free-run juice is used in making this wine. The wine is then aged for 11 months in 25% new French oak barrels. What makes these barrels unique are their staves – they were air dried before being transformed into a completed barrel.
